So lately I have been craving chocolate yet I am so not into dairy…I have large number of reasons why…animal cruelty, cocoa beans being picked by enslaved children, dairy causing a number of heart, lung, pancreas issues and maybe one day, I’ll go a little deeper with the results of my research. In the mean time, being human, female and pregnant, sometimes I just gotta indulge.
Indulgence still comes with responsibilities. I strongly encourage you to purchase as much fair trade food as much possible. We love our animals as vegans but more importantly then them, we love our people.
Ok. So getting back to business…Vegan Chocolate Banana Loaf.

Vegan Chocolate Banana Loaf
Start with the liquids
3 Ripe Bananas
1 Flax “egg” (3TBSP flax plus 3 TBSP water mix and sit for 15 min)
1/4 cup maple syrup
1/4 cup coconut oil melted
1tsp Vanilla Extract
Blend well
Next mix the dry stuff
3/4 cup Almond Flour
3 tsp Baking powder
1/2 tsp Baking Powder
1/2 C Cocoa Powder
1.25 c Oat Flour (I make my own using oats and nutribullet)
1/4 cup coconut sugar
Add in the optional stuff:
1/2 C Chocolate chips (vegan and fair trade)
1/2 C walnuts
Mix together and bake at 350 degrees for roughly 75 minutes depending on your oven.
