Peppermint Latte Brownies

I have been experimenting with brownies lately. Im not sure why or if its the Christmas season approaching, but I made these fabulous expresso brownies which is very very similar to the recipe down below. I decided to add some festive spirit so that I could take these along to a family christmas gathering. Our family is not vegan or even close to be honest but I wanted to show them that there is ways to have many of their favourite dishes without the harm. Brownies without oil or butter or any fatty goodness was a challenge but I managed these. They aren’t fat free as the chia does add in about 4.5 grams of fat (to the whole brownie) but they do have the healthy whole food plant based fat instead of oils which are fat with nutrients stripped. These brownies are moist, chewing and fabulous. Totally worth bringing to potlucks, family gatherings or eating in one sitting…lol ok so I didn’t but I did enjoy them this morning with tea and made them for my husband who just got home from being away. This recipe came about from a pregnancy craving for a good chewy moist brownie but I think I’ll be enjoying these for a while.
