Creamy Rice and Kale Stuffed Portobellos

Here’s some thing both bright and comforting! Recently while out grocery shopping we happened across some big and beautiful portobello mushrooms and I just knew I had to come up with something to do with them. These were both family and company tested and everyone loved them! They are healthy, filling and so very tasty not to mention very classy looking for serving at dinner parties. Mushrooms provide a variety of nutrients including vitamins D and B12 which are sometimes more difficult to get into the vegan diet. The sauce is bright and dreamy and the dill gives just a hint of tang. Try these out this summer, you wont be disappointed!
