Black Cherry Black Bean Vegan Brownies

 

Cherry season is wrapping up here in the beautiful Okanagan. We LOVE cherry season. It is not uncommon to find us cherry picking or to find my kitchen looking slightly like a crime scene. We LOVE cherries!

However, at the end of cherry season, namely this morning, I find a small bowl of leftover cherries that are rather sad looking. I also am excited that my sister is coming tonight for choo choo wine wine. Yup, you read that right. We play ticket to ride with a glass of wine and now with these amazing brownies! So if you happen to find beautiful cherries or sad cherries…well a cherry is delicious so toss them in here for a low sugar, whole food, vegan, gluten free, blah blah blah brownies. They are good. And good for you!

1 Can of Black beans (15 oz) Drained and Rinsed

1/2 Ripe Banana

1/2 Cup Coco powder (Please use fairly traded!)

3/4 Cup Oats

2 Flax Eggs (Mix 2 TBSP of flax with 5.5 TBSP water and let sit for 10 minutes)

1/8 Cup Unsweetened Non-Dairy Milk

1 Tsp Vanilla

1/2 cup of Cherry Juice

1/2 Cup of Coconut Sugar

1 tsp Salt

1 Cup of chopped pitted cherries

Optional: Vegan chocolate chips or nuts

 

  1. Mix up the flax egg and let sit, preheat oven to 350
  2. Throw everything in the blender except the chopped cherries and blend until smooth
  3. Pour batter into a 9X9 pan
  4. Bake for 30-35 minutes until baked through
  5. Enjoy!
