The Most Amazing Vegan Lasagna With Sun Dried Tomato Basil Ricotta

I will be the first to tell you that I am so not Italian. I don’t particularly care for pasta but as we had a rare cool day, I decided that we should give this a try.

I happened to have some lovely organic lentil lasagna sheets on hand and thus this recipe was born! Not only was it born, but it FLOURISHED! It was amazing! My kids ate two full servings broccoli and all!

The best part? No guilt here! No animals harmed in the making just good wholesome delicious veggies. It wasn’t hard to make and I had all the ingredients on hand. Please try it! You will not be disappointed!
