The Best Easy Vegan Biscuits

I have been doing the single parent thing for a little while now while hubby is away for business. Thankfully I have help from some friends, family, and others around me. My wonderful father-in-law came by this past weekend with some amazing cauliflower soup that I need to get the recipe for! I tried to keep it lower in fat but biscuits need a little to make them what they are! It was so tasty especially on the cool rainy day that has been going on here lately. I just love soups but I also love sides for the soups as well so I quickly came up with this awesome recipe for some whole wheat biscuits. I added in oregano and onion for the flavour particular soup but it would be so easy to add other spices. They took just 20 minutes to make and fluffed up beautifully in the oven.

Here is the recipe for these!

Ingredients

4 cups Whole Wheat Flour

2.5 TBPS Baking Powder

1 TBSP Baking Soda

1 TBSP Salt

4 TBSP Coconut Oil at room temp

2 Cups Unsweetened Milk of Choice. I used unsweetened soy milk

2 TBSP Apple Cider Vinegar

Spices of choice

 

Preheat oven to 400 degrees. Mix together dry ingredients first. Mix the apple cider vinegar and coconut oil into the dry mix and mix well. Then add in the soy milk (or whatever you are using). Mix well and set aside for 10 minutes for the vinegar to activate. Roll dough to 1 Inch thick and cut out using a cookie cutter or biscuit cutter or just use a glass. You can also drop biscuits onto the cookie sheet. Bake for 15 minutes until brown and fluffy!
