Unique Vegan Crockpot Cabbage Roll Soup

I’m happy to be sharing this one! My family absolutely loved this soup! I don’t have many memories of my grandmother who passed away when I was around 17 but a memory I do have is cabbage rolls! This is my own unique take on cabbage rolls and has some kind of weird spices. Don’t be afraid! They were honestly delicious! This would be great for both meat eaters and veggie heads alike. The lentils give a meaty texture not to mention fibre and protein! So get started! This is easy and delicious and you will not will great making this one.

 

Unique Vegan Crockpot Cabbage Soup

1 head of a cabbage (roughly 6 cups chopped)

1 cup of brown rice

1 can of tomato paste

1 cup of soaked sprouted lentils

1 cup of chopped fresh tomatos

1 onion chopped

2 cloves of garlic minced

7 cups of water

2 tbsp Smoked Paprika

1 tbsp cinnamon

1 tbsp cloves

2 tbsp each garlic powder and onion powder

1 tbsp chili powder

Salt and pepper to taste

1/4 cup maple syrup (or more depending on the level of sweet you like)

 

Mix everything thoroughly in crock pot and turn on to low heat for 6-9 hours (my crockpot runs hot so it didn’t take as long for the rice and cabbage to be tender). Taste and add in more of the spices if needed.  Serve and enjoy!

 

Like I said, its unique but oh so yummy!
